Ingredients for Holi Dahi Vada recipe:

For the vadas

  • 1/2 cup urad dal (split black lentils), soaked for 4 hours
  • 12 mm. (1/2″) piece ginger
  • 2 green chillies
  • a pinch of soda bi-carb
  • salt for taste taste

For the garnish

  • chilli powder
  • roasted cumin seeds (jeera) powder
  • Aam chur
  • Green coriander leaf

For serving

  • 3 cups beaten curds (dahi)
  • 2 tbsp Khajur Imli ki Chutney
  • 2-or-3 tsp sugar
  • salt to taste

Method For making the Vadas

  • Wash and drain the urad dal.
  • Grind together the urad dal, ginger, green chillies and salt in a food processor to a coarse paste.( for some twist you can add black cumin seeds(kala jeera) ).
  • Add the soda bi-carb to the urad dal paste and mix well with the help of spoon or spatula till the batter became light and fluffy. Add a little water if required.
  • Be careful while adding extra water it should be little corse  and tight paste not so liquidize so try to ignore to add extra water if possible.
  • Wet your hands and take 2 tablespoons of the batter on your palm or on a sheet of wet plastic and shape into a circle of 25 mm. (1″) diameter. Deep fry in hot oil on a slow flame till the vadas are golden brown for about few minutes.
  • Drain on absorbent paper.

How to proceed

  1. Soak the deep fried vadas in water for about 45 minutes. But be careful don’t left them for excess, it may led to harm your vada’s  texture and taste too.
  2. Just before serving, drain and squeeze out the excess water.
  3. Arrange the vadas on a serving dish
  4. Take beaten curd or simple curd then beat it and add some sugar about 2 tsp bt make sure you and your family like sweet and sour taste don’t add so much sugar so be careful with it and add sugar as per quantity of curd.
  5. Place 1 or 2 vadas on a dish split your beaten sweet curd on each vadas.
  6. Garnish with chilli powder, aamchur powder, cumin seed powder and salt and serve with khajur imli ki chutney.
